As a food lover and dessert enthusiast, it is no wonder that I am obsessed with everything involving cakes, pastries and sweets, especially anything that has to do with chocolates, cupcakes and Oreos. So why not combine them?

This recipe is a medley of goodness. It is a melt-in-your-mouth heavenly experience as you bite through the perfect ratio of cake and icing while being surprised be a delicious Oreo at the bottom. This dessert was inspired by a dessert that a friend made using Oreos.

The first time I made it was for my 22nd birthday celebration. Even my anti-sugar friend had seconds.

Ingredients

  • 12 Oreos
  • 3 eggs
  • 5 ounces softened butter
  • 5 ounces caster sugar
  • 5 ½ ounces self-rising flour
  • ½ ounce cocoa powder
  • Teaspoon of vanilla essence
  • 6 ounces of melted white chocolate
  • ½ cup cream cheese
  • ½ cup confectioners’ sugar
  • ¼ cup thick cream*
  • 1 teaspoon vanilla extract
  • 4 Oreos

Directions

  • 1Prepare muffin tin with butter to avoid cupcakes sticking to the pan and preheat the oven to 350 °F.
  • 2Sift all dry ingredients for the cupcakes into a mixing bowl. Then, beat the eggs and vanilla together before adding to the dry ingredients and beat with a handheld electric whisk four roughly 2 minutes and until the batter is smooth, thick and creamy.
  • 3Place one Oreo in each case as this goes at the bottom.
  • 44) Spoon and divide mixture into prepared tin and over the Oreos and smooth out top. (Wet your finger and run your finger over the cupcake mixture to smooth it out. The water will prevent the mixture from sticking to your hands and will therefore create a smoother finish and more even product.) Bake for roughly 20 minutes or until cooked and put on a wire rack to cool.
  • 5Prepare the frosting by melting the white chocolate over a double boiler. Sift confectionary sugar in a separate bowl. Add the cream and cream cheese to the white chocolate and mix well before adding to the confectionary sugar and mixing until smooth and thick. Crush or blend Oreos into crumbs.
  • 6Once frosting has been spread onto cupcakes, the Oreos should be sprinkled over in order to create a beautiful and delicious cupcake.*
