If you like a spicy dish well this is the one to try. With the this entree it has as spinach with lettuce and in the salad it has ranch dressing, tomatoes, cucumber, and avocado. I am not a person who likes spicy food, but this was fantastic. 

Ingredients

  • 1/4 cup olive oil
  • 2 cups diced onions
  • 1/2 teaspoons minced garlic
  • 1/4 teaspoons dried red pepper flakes
  • 1/2 teaspoon salt
  • 1 tablespoon freshly gound black pepper
  • 3/4 cup herbed italian salad dressing
  • 1 (28-ounce) can chopped plum tomatoes, including juice
  • 1 1/2 pounds angel hair or penne pasta
  • 1 (12-ounce) can water-packed artichoke hearts, drained
  • 2 tablespoons chopped fresh basil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup freshly grated Parmesan cheese
  • Parmesan cheese, garnish

Directions

  • 1In a large frying pan, warm oil over medium heat saute onion and garlic until softened. Add herbs, seasoning, Italian dressing and tomatoes with juice: simmer for 15 minutes.
  • 2While tomato sauce is cooking, in a large pot, cook pasta al dente, according to package directions. Drain, reutrn to pot and add 2 tablespoons olive oil; toss to coat. Cover to keep warm.
  • 3Stir in artichoke hearts, basil, cilantro and parsley, simmer for 5 minutes to blend flavors and heat through. Add to pasta and toss to coat
  • 4Just before serving, stir in Parmesan. Turn pasta mixture onto heated individual plates and serve with additional parmesan
