This Sausage, Potato, Roasted pepper, Kale and cheese Frittata is a family friendly dish. There’s nothing better than a good breakfast to start the busy day you have ahead of you. It all comes together in an oven safe skillet, preferably a cast iron one if you have. This frittata is hearty, full of protein and incredibly flavorful.

A Frittata is essentially an egg based dish very similar to a crust less quiche that is usually served for breakfast but can really be served up for breakfast, lunch or dinner. They are very easy and versatile! You can pretty much use whatever you have in your refrigerator or pantry. You’ll start cooking on the stovetop browning up your sausage, onion and potato in a mixture of olive oil and butter. Then you will add in your eggs, roasted red peppers, kale and cheese. After you have placed all of your ingredients in the skillet, just place it in the oven and cook until bubbly, golden and your eggs are cooked through.

To save time in the morning this recipe can be made the night before just cut a slice and heat it up in the morning, because if your morning gets as crazy as mine do with trying to get ready, getting kids up for school and out the door a good hardy breakfast usually turns into a back thought.

Sausage, Potato, Kale and Cheese Frittata

Note: Change it up a little you can add any ingredients you like for example: mushrooms, spinach, olives and all different types of cheeses. Have fun with it and Enjoy!!

Ingredients

  • 1 Tbsp olive oil
  • 3 Tbsp butter
  • 12 eggs, whisked
  • 1 12 oz pkg of breakfast sausage or 1pkg sweet Italian sausage
  • 2 potatoes, diced
  • Half of 1 small onion, sliced thin
  • ½ cup of cheddar cheese or monterey jack, shredded
  • 1 12oz jar roasted red pepper, sliced thin and diced
  • 1 ½ cup kale, torn into pieces
  • A dash of hot sauce, optional

Directions

  • 1Preheat oven to 375 degrees
  • 2Take the sausage out of the casing, you can do this by cutting a slit down the middle
  • 3Heat your oven safe skillet on the stovetop under medium heat
  • 4Add your olive oil, butter, sausage, onion and potato to the skillet. Season with salt and pepper
  • 5Break up the sausage into smaller piece by stirring frequently
  • 6Once the sausage and potato are lightly brown gently stir in the kale, eggs, roasted peppers, hot sauce (optional) and cheese.
  • 7Place the skillet in the oven and bake for about 15-20 mins or until golden
  • 8Slide the frittata out of the skillet and onto a cutting board, with a serrated knife cut into 8 wedges
