So i have never been a salad girl lol, hence all the curves on my body lol. In as much as i love my body i realized i needed to eat healthier to avoid family illnesses like Diabetes. I know there are people out there like me who would like to eat healthier too but are just not into salads, i see you! So i have done my research on healthy starch you can incorporate into your diet that will not make you gain weight. I hope you enjoy this as much as i did! :) 

Ingredients

  • 1 cup Brown Rice
  • 100 grams lean beef/ pork mince
  • 2 fresh tomatoes
  • 1 onion
  • Garlic flakes (or fresh garlic)
  • White pepper, Mixed herbs and chilli powder
  • 1 Cucumber
  • Green pepper

Directions

  • 1Boil 2 cups of water and add a teaspoon of cooking oil and a teaspoon of salt. Add your rice into the boiling water and stir to ensure the rice doesn't stick to your pot. Let your rice cook on high heat and lower the heat when the rice is almost done.
  • 2In a cooking pan, fry your mince until golden brown. Add salt, and all the spices. Saute the mince and spices for a minute or so. Add in the onions and green pepper. Saute for 3 minutes until the onions and green pepper soften. Add in the grated tomato. Leave to simmer for 3 minutes until the tomato is cooked.
  • 3Slice your cucumber into thin slices. Slice the tomato into chunks and mix the two.
  • 4Place the rice into your plate first, serve your mince beside your rice and your salad as well and enjoy!
