In mangalore these are very famous as rose cookies specially during the Christmas season. I just love them. After i came to UAE i found them in every supermarket and its called as acchappam as its a very famous kerala snack. But it was only recent during my visit to my dear friend Afshan Sheriffs house she told she had a acchappam mould and we planned to make them . I was very amazed to see the art of making these beautiful roses. I decided to make it myself in my house and my son too enjoyed making them with me. So here inam sharing this easy snack with you. Do try it and enjoy .

Ingredients

  • Rice flour- 3/4 cup
  • All purpose flour 1/4cup
  • 1 small egg
  • Sugar 1/4cup
  • 1 cup coconut milk (i used tinned)
  • Black sesame seeds 1/2tsp
  • Salt 1 pinch
  • Oil for deep frying
  • Acchappam mould

Directions

  • 1In a wide bowl mix egg , salt, sugar and coconut milk whisk well add the flours and sesame seeds into a lump free smooth mixture .
  • 2I am using a non stick acchappam mould which is easier to use than the regular iron ones. If you are using these then you can directly place the mould into the batter but be careful to only cover 80%of the mould should be covered with the batter this is very important as it will easily come out of the mould while frying. if you dip it fully in the batter the cookies will stick in the mould itself and then you need to scrape and remove it with a knife.
  • 3If you are using the iron ones then you need to dip the mould in hot oil first for a couple of minutes then dip it in the batter only 80% of the mould covering the batter . Now immediately place this mould in hot oil .You will see the oil bubbling. After few seconds, shake the mould handle gently to release the cookie into the oil. You can also use a fork to help release it too.
    Let it fry in medium heat till the bubbling of the oil subsides.Turn them half way so that both sides have an even golden brown colour. Remove them in a kitchen paper towel to drain excess oil.In the meantime, leave the mould in the hot oil so that it is ready for the next one. Keep mixing the batter so that you have a smooth batter. Repeat till the batter is finished. Enjoy them with tea.
