Baigan ka raita is a delicious yoghurt based side dish made with shallow fried brinjal and given a tempering to enhance the flavour. Its so simple easy and quick that can be made in just 15 mts . I had this first in Afsha's house which was made by her sister and I couldn't stop licking every bit of it as I am a brinjal lover. So here I am sharing this quick easy recipe with you all too. Do try it when you dont know what side dish to make for your next meal.
Ingredients
- One long egg plant/ brinjal
- Oil for shallow frying
- Red chili half tsp
- Salt to taste
- For tempering;
- 2 tbsp oil
- 1/4 tsp mustard seeds
- 1/2tsp cumin seeds
- 1 dry red chilli
- Curry leaves 1 string
Directions
- 1Cut the brinjal into thin round circles and shallow fry them till they are cooked. Dont over cook so that they loose thier shape. Arrange them in a wide bowl.
- 2Mix together yogurt, salt and red chili powder. Pour this yogurt over the fried brinjal .
- 3Now for tempering. Heat 2 tbsp of oil in a small tempering pan add mustard seeds when they sputter add zeera , curry leaves, red chili after a minute pour this evenly over the yoghurt. It's ready to serve with any pulao or Biryani
