Ingredients

  • Mutton or beef 700 gms
  • Ghee 4 tbsp
  • Oil 4 tbsp + 3 tbsp
  • Onions 4 large sliced
  • Green Cardamom 3
  • Black Cardamom 2
  • Cinnamon 1 inch pc
  • Star anise 1
  • 10 green chillies
  • Ginger garlic paste 2 tbsp , 1 tbsp coriander powder 1/2tsp red chilli powder
  • Coriander leaves 1 cup chopped
  • Mint leaves 1 cup
  • 4 large tomatoes
  • Yoghurt 1/2cup
  • Lemon juice 2 tbsp
  • For rice preparation;
  • 3 cups of zeera rice
  • 2 green Cardamom
  • 2 cloves
  • 1 inch cinnamon
  • 1/2 star anise
  • 1 tsp zeera
  • Onion 1 medium sliced
  • Red chili powder 1 tsp or more.
  • Salt to taste
  • Fried onions to garnish
  • Coriander leaves chopped
  • Mint leaves chopped handfull

Directions

  • 1Heat ghee and oil 4 tbs in a pot till well heated add whole garam masala spices when it crackles add onions till nicely golden. Now add green chillies and ginger garlic paste stir for couple of minutes. Add 1/2tsp red chilli powder and coriander powder. Stir for couple of minutes.
  • 2Add chopped coriander leaves and mint leaves . Stir for another couple of minutes add chopped tomatoes stir well till nicely mashed add mutton or beef stir well till the meat colour changes now cover and cook till meat it a little tender if needed add water ,add yoghurt stir well and let it cook if needed add lemon juice and check the salt. Set aside.
  • 3In a bigger pot heat oil 3 tbsp add 2 green cardamom , 1 inch cinnamon stick , 2 cloves when it cracks add onion sliced when its translucent add red chili powder 1tsp . Note; this Biryani is supposed to be spicy . Check the mutton gravy if it's not spicy as green chillies varies in its spice level then adjust the spiciness by adding more or less red chili powder in the rice .
  • 4Add the rice and give it a good mix . Now add hot water around 5 and half cups . My gravy was semi dry without any watery gravy so I added 5 and half cups . If you feel you have a watery gravy add half cup less water. Let it cook on low flame covered. Give a mix after 5 mts . Let it cook cor 5 to 8 mts and give a stir again to avoid sticking to your pot. Once the rice it cooked let it stay undisturbed for half an hour . Garnish with fried onions coriander leaves and mint leaves and serve it with raita.
