Goli baje as the name suggests goli means round and baje is flitters.  Its a popular street snack which crispy from outside and spongy inside its served with coconut chutney.Its mostly made as a tea time snack in many homes.  Do try it and give it a feedback. 

Ingredients

  • 2 cups all purpose flour
  • 1 cup yogurt
  • 1tbsp grated ginger
  • 1tbsp green chillies finely chopped
  • 1 tbsp curry leaves finely chopped
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2tsp bicarbonate soda

Directions

  • 1In a deep bowl take yogurt and mix all the ingredients together gradually add the flour and keep beating it in your hands constantly as shown in the video this process is important as it will aerate the batter . The batter should be thick and sticky but dropping consistency not flowing consistency. Set this batter to ferment for 2 hrs .
  • 2After 2 hrs heat oil for deep frying in a kadai.
    Meanwhile beat the batter again with your bare hands for a minute in circular motions. To check if the oil is ready drop a small ball in the oil . The ball the rise up immediately but tale care its should not brown instant that means your oil is very hot and the flitters will not cook well inside.
  • 3One by one drop small size balls as they will double up in size keep stirring continuously until its turns nice gold brown. Remove them with a strainer into a tissue paper so that it absorbs excess oil. Serve hot with chutney.
