Jackfruit and mangoes are among my favourite fruits. In UAE its easy to enjoy all sorts of mangoes particularly Pakistani but hard to find a good jackfruit and its very expensive too . But each year during my vacation my mom manages to in advance keep my share of jackfruit which i relish . During my last vacation I made a lot of dishes with it like jackfruit stir fry , juice and halwa. This halwa is inspired by 12 recipe book which I would like to share with you. Its really easy and quick. Do give it a try.
- Jack fruit deseeded and cut into pieces-2 cup
- Ghee 2 tbsp
- Jaggery 1/2cup powdered or more
- Cornflour 1/4'cup
- Chopped dry fruits
- 1In a pressure cooker add the jackfruit pieces and water just to cover the jackfruit around half cup or just a little more. Pressure cook it for 3 whistles on high flame. Once cooled grind the jackfruit to a smooth puree.
- 2In a non-stick pan with 1 tbsp of ghee.
Add pureed jack fruit and saute for 2 to 3 minutes without changing its color.
Add powdered jaggery and stir well ,you can add more jaggery if your jackfruit is not sweet enough. Stir well for another couple of minutes
Mix corn flour with little water and make smooth batter.
Add in to the jackfruit and mix well continuously until thickens.
Add the remaining 1 tbsp of ghee and cook until halwa leaves from the sides of the pan. Your halwa is ready .
Add chopped dry fruits to garnish
