Lauki moong daal is a easy and simple curry for daily cooking. Lauki being highly nutritious combined with moong daal which is a source of protein will give you the required amount of energy for the day. This can be eaten either with rice or with any sort of bread. Fo try this and give me a feed back

Ingredients

  • Bottle gourd 400 gms
  • 1 large onion
  • 1 tomato
  • 2 green chillies
  • 3 cloves of garlic
  • 1/4cup coconut
  • Zeera 1/2tsp
  • turmeric powder 1/2tsp
  • 1 cup moong daal, chopped coriander leaves handfull
  • For tempering;
  • Curry leaves 2 springs
  • Red chilly 1
  • Mustard seeds 1/2tsp
  • Urad daal 1/2tsp
  • Zeera 1/2 tsp

Directions

  • 1Peel and chop the bottle gourd into small pieces. In a cooking pot add 2 cup of water, the chopped onions, garlic , green chillies , tomatoes , bottle gourd, moong daal, salt and turmeric powder cover and let it cook till the daal and lauki is very well cooked.
  • 2Meanwhile in a small blender just pulse the coconut and cumin seeds. We dont want it to be in a paste form so just pulse it without water till the cumin is crushed. We want a powdery consistency.
  • 3Now when the daal is cooked add this coconut into it. Mix it well . Add chopped coriander leaves.
  • 4Now in a small tempering pan add oil 2 tbsp add mustard seeds, zeera , urad daal , red chili and curry leaves when it crackles off the gas and add this to the daal serve hot with rice .
