Popular Indian street-food, Paneer tikka rolls are warm, layered parathas filled with spicy paneer, mixed peppers and sweet caramelized onions. Whether you make it for a quick weeknight meal or a leisurely gathering, these rolls are sure to be a hit!

Ingredients

  • Ingredients for the marination;Paneer cut into cubes 250gms
  • Red chilli powder 1/2 tsp or more
  • Yoghurt 1/2cup
  • Ginger garlic paste 1 tsp
  • Coriander powder 1/2 tsp
  • Pepper powder 1/2 tsp
  • Salt to taste
  • Lemon juice 1 tbsp
  • Other ingredients;
  • Onion slices 1 large
  • Tomato slices 1 medium
  • Capsicum sliced 1 medium
  • Chapatis as required
  • Ingredients for the chutney;
  • 1 cup coriander leaves
  • 1 cup mint leaves
  • 1green chilly
  • Salt to taste
  • Lemon juice 1 tbsp
  • Yoghurt 1tbsp

Directions

  • 1In the bowl mix all the ingredients together under marination and marinade the paneer for an hour.
  • 2In a pan add 2 tbsp of oil and drop in only the pieces of paneer if there is excess marinade keep it aside to later use . This is because if you add the excess marinade then they tend to leave a lot of water and the paneer will become soggy. Turn sides and fry it on all sides. Set it aside. You can also grill the paneer pieces instead of frying.
  • 3Take a pan add 2 tbsp of oil add the onion and capsicum and saute for half a minute add tomatoes and the remaining marinade saved earlier fry for just a minute. Dont over cook we want the veggies crunchy. Season with a little salt. Set aside.
  • 4Make the coriander and mint chutney by just grinding all the ingredients under the chutney into a fine paste. Try not to put water while grinding. Otherwise it will be too watery, the lemon juice and yoghurt will help it grind.Set aside.
  • 5Now for the assembling take a chapati or roti spread the chutney evenly all over the roti in the centre keep the paneer pieces then add the required amount of veggies over the paneer. Now carefully roll the roti to make a roll ..serve immediately. Enjoy
