Eggs always come as a rescue when we really dont know what to cook or feel lazy to cook but want to eat something tasty and healthy too. In my house eggs are eaten happily without a fuss.
Todays dish is a special egg masala which is a unique preparation of eggs which includes hard boiled eggs as well as half fry eggs which gives a lovely taste and finally a butter tempering which elevates the taste of the masala. This can be enjoyed with any flat breads or dosa. Do try this unique dish.
- Hard Boiled eggs 4
- Eggs to be half fried 2
- Onion 2 large finely chopped
- Tomatoes 2 medium finely chopped
- Green chilies chopped 2 Red chili powder 1/2 tsp
- Cumin powder 1tsp
- Coriander powder 1tsp
- Turmeric powder 1/2tsp
- Garam masala powder 1/2tsp
- Salt to taste
- Coriander leaves chopped handful
- Butter 2 tbsp
- Oil 2 tbsp
- For tempering;
- Butter 1 tbsp
- Red chili powder 1/2tsp
- 1Boil eggs in a saucepan. Peel and chop them in to tiny chunks.
In a pan,add oil,onion, fry for 2 mts no need of browning add tomato and green chilies mix well.Add cumin powder,coriander powder,red chili powder,turmeric powder,garam masala power,salt,mix & mash well.
Add boiled eggs,mix & mash well until well combined.
Add water,mix well and cook for 2 minutes.
Add butter and coriander leaves .
In small frying pan,add oil and break 2 eggs and half fry it.
Add this half fry egg over cooked masala egg and mix well. No need to cook the eggs again in the gravy as it's already cooked we need just the taste of half fried eggs to come in the gravy .Off the flame .
In small frying pan,add butter,red chili powder and mix well,pour over cooked masala eggs.
Add fresh coriander and serve with bread or roti.
