I love fish, be it a smoked fish, fried fish, boiled fish or like this dish, which is a fish stew with vegetables. Each and every family member of my family loves this fish. I usually serve this with steamed rice. I come from Asia so I have a special soft corner for rice, of course this dish can be served with tortilla, bread too. I have used a special ingredient in the recipe that is lentil cubes which cannot be store bought. Later on I would share my homemade recipe of how to make “lentil cubes”. Adding the lentil cubes increases the taste of the dish. You can of course omit it if you cannot make it at home. Adding mushrooms instead of lentil cubes.

This dish usually works best during the winter. Every time winter comes, my family seems to lean towards soups and stews.

The dish contains vegetables like green beans, cherry tomatoes, and onion. I have used both red cherry tomatoes and yellow cherry tomatoes. This gives the dish a nice color combination. Adding the green beans too gives the dish a nice texture.

Let’s dig in a bit in the nutrition value of the recipe. It contains cherry tomatoes which is high in fiber, vitamin C, protein and some other vitamins too. It contains green beans which belong to the pea family. It is famous for its sweet flavor. It is also very high in fiber.

In the picture you can see everything except the fish is getting cooked with the spices and some water. I have not taken the pictures from the very beginning. Let me guide you through this stage. First you need to add some oil to the pan. Add your onion, following by the pastes, spices and the lentil cubes. Later on you would add the vegetables and pour some water in it.

 Once the water starts to boil up, add the fish fillets one by one carefully. You no longer have to stir the mixture. Cook for about 10 minutes on medium heat without covering your pan.

After 15 minutes you would reach at this stage. I personally love my fish stew a bit runny. You can of course cook for longer to evaporate the water level of the stew. Cooking it for 10 more minutes over high heat would make the texture more thick.

Ingredients

  • 500 g Gold Band Snapper
  • 4-6 yellow cherry tomatoes
  • 6-8 red cherry tomatoes
  • 4-6 lentil cubes (Homemade Recipe)
  • 1 onion, diced
  • 6-8 green beans
  • 1 tbsp olive oil
  • 1 tsp ginger garlic paste
  • ½ tsp turmeric powder
  • ½ tsp cumin powder

Directions

  • 1Cut the fish into medium size pieces.
  • 2In a pan heat your olive oil over medium heat.
  • 3Fry the onion for about 2 minutes or until they become slightly brown.
  • 4Add the lentil cubes and toss for a minute.
  • 5Add the ginger garlic paste, cumin and turmeric and pour 1 tbsp water.
  • 6Stir for 5 minutes with the lid on. Add the green beans, cherry tomatoes and toss for 5 minutes.
  • 7Pour in 1 cup of water and cook on high heat for about 10 minutes or until they start to boil.
  • 8Add the fish fillets and cook for another 10 to 15 minutes.
