We had some leftover Buttermilk from an Oven-fried Chicken recipe.  The Chicken was "so-so."   I haven't found a oven-fried chicken recipe that mimics good old Southern Fried Chicken.

Man has been grinding grains for over 30,000 years.  So, there's something "primal" about anything made with grain.  Pancakes probably came before the discovery of yeast which abracadabara we have bread.  Check out almost any culture on any continent and you'll find some variation of the pancake.

There's also a pancake connection to the Christian calendar.  Shrove Tuesday a day of partying before Lent.  You were expected to use up your perishable eggs, milk and butter before the tummy growling Church directed fasting began.

You're going to delight in these moist Buttermilk Pancakes with Blueberries.

  • 3 cups All-purpose Flour
  • 2 1/2 tablespoons Sugar (white)
  • 3 teaspoons Baking Powder
  • 1 1/2 teaspoons Baking Soda
  • 1/2 teaspoon Salt (Kosher)
  • 3 cups Buttermilk
  • 1/2 cup Milk (2% or greater)
  • 3 Eggs (large))
  • 1 teaspoon Vanilla (no immitation please)
  • 1/2 cup Butter (1 stick or 1/4 lb.) melted (not softened)
  • 1 cup Blueberries (optional)


  • Go crazy and add any fruit, nuts or both to these moist buttery pancakes
  • 1Sift all of the dry ingredients together: flour, sugar, baking powder, baking soda and salt into a large bowl. Watch that you don't overflow your sifter's capacity, as this is a large volume of dry product.
  • 2In a separate bowl whisk together the wet ingredients: eggs (first & scramble) then whisk in the buttermilk, regular milk, vanilla and finally the "melted butter."
  • 3Add the thoroughly mixed wet ingredients into the very large bowl containing the dry ingredients and whisk until only a few small lumps form in the Batter. Do not over-beat!
  • 4Heat Griddle to medium hot or if you have an electric stand-alone griddle, you should set it for 350F degrees
  • 5Scoop about 1/2 cup of Batter onto the lightly greased griddle and allow the pancake to bubble and as the edges begin to dry; it's time to flip you pancake and let the other side brown.
  • 6You should drop the blueberries onto the pancake while you are cooking side one (1) about 30 seconds before turning them over
