Oxtail stew

Growing up on a farm means big family to feed. Each and every year my grandmother used to slaughter a cow on Christmas Day and my favourite meat was oxtail. Until today I make sure that I make oxtail every month once  or twice . The recipe here is what I normally use . It is easy to prepare .

Ingredients

  • 1 large Onion
  • 4 whole Tomatoes chopped finely
  • 3 medium Carrots chopped into cubes
  • 150g cerely chopped finely
  • 150g Tomatoes paste
  • 1 lt Beef stock
  • 5g Salt and 5g pepper
  • 1 lt water
  • 1kg oxtail fat removed

Directions

  • 1First you need to sear the meat until brown and take it out of the heat .
  • 2Fry onion until brown add salt and pepper .
  • 3Add tomato paste and fry until the onions are cover with tomato paste .
  • 4Add chopped carrots and cerely and cook for 3 minutes and keep in turning so that it will not burn.
  • 5Add the meat back into the pot and stir well with the rest of the ingredients and add beef stock. Cook for two hours and add chopped tomatoes .
  • 6Cook again for another hour and add water . Keep on checking every 30 minutes and stir to prevent burning on the bottom .
  • 7After another hour taste salt and pepper and remove off the stove . Serve it with rice or pap.
