OFADA SAUCE

Ofada sauce, also known as “Ayamase”, in ijebu , western part of Nigeria.It is a tantalising sauce that is based on a local recipe that is sure to get your mouth watering! It is usually served alongside Ofada rice(unpolished rice), regular long grain rice,or even perfumed rice like jasmine or basmati rice. you can also enjoy it with fried plantain too(dodo).If quick dinner recipes are what you’re looking for, this Ofada sauce recipe is hassle-free and easy to prepare.

Ingredients

  • Unripe habanero pepper (Ata Rodo),
  • 3-4 or more of chopped assorted meat,
  • 2 green tatashe peppers or green bell peppers,
  • 2 wraps of fermented locust bean
  • Palm oil,
  • 1 Onion,
  • seasoning cube
  • 1 cooking spoon of grounded Crayfish (if you choose),
  • Beef or Cow Tripe (Beef tripe is usually made from the muscle wall (the interior mucosal lining is removed) of only the first three chambers of a cow's stomach)

Directions

  • 1Wash and blend the peppers and the onion. Remember to remove the seeds from the green tatashe or the green bell peppers.
  • 2Grind the crayfish and the locust bean seasoning with a dry mill, or blender
  • 3Cook your meat and beef tripe with seasoning, but I prefer to use Knorr Stock Cubes until well done.
  • 4Pour the blended pepper into a separate pot and cook on high heat until all of the water dries up..
  • 5Pour the red palm oil into a clean, dry pot and bleach until it turns clear. It should look like vegetable oil when done.
  • 6Leave the oil to cool down a bit and then add the boiled pepper puree; fry the mixture until all of the water has evaporated.
  • 7Add the crayfish and locust bean seasoning, as well as the meat and fish, and stir well.
  • 8Add salt to taste, leave the mixture to simmer and it is ready to be served.
  • 9Serve with Rice along with your favorite juice.
