I like this recipe because it's easy to prepare, healthy and fast.
This is Mediterranean dish.
Ingredients
- Pasta :
- 5 l water
- 1 tbsp salt
- 500 g Durum wheat rigatoni
- Sauce :
- 1 tbsp coconut oil
- 2 medium red onion, ( chopped )
- 4 cloves garlic, ( chopped )
- 1 can ( 180 g ) Tuna fillet in water
- 1 can ( 400g ) Peeled tomatoes ( cut into cubes )
- 5 green olives ( cut in half )
- 1 tsp dry oregano
- 1 tsp dry basil leaves
- 5 fresh basil leaves
- 1 tsp dry chili ( powder ) if you like spicy
- 1 tsp spanish paprika ( powder )
- 1 tbsp extra virgin olive oil
- 1 tsp black pepper ( half ground )
- Decoration :
- 4-5 fresh basil leaves
- 4-5 olives
Directions
- Pasta :
- 1When the water begins to boil, add salt and put rigatoni, cook 13 minutes ( need to be al dente ).
- 2If it's cooked just drain.
- Sauce :
- 1Prepare all ingredients ( cut, chop )
- 2First saute onion and 1 tsp salt on coconut oil for 3 minutes ( low flame ), Cook until the liquid released.
- 3Add garlic, when garlic start to smell good, put tuna fillet with water, stir fry for 3 minutes ( medium flame ).
- 4Than put tomato cubes with sauce , green olives ( half ), 1 tsp black pepper, 1 tsp dry oregano, 1 tsp dry basil, 1 tsp chili powder, 1 tsp Spanish paprika and cook for 4 minutes more ( high flame ).
- 5If the sauce is to thick just add water and salt if not enough salty .
The sauce is ready . - Serving :
- 1When the sauce is already on pasta we just add fresh basil leaves, green olive and extra virgin olive oil on the top.
