This is one of my favorite recipes, it's easy and delicious!! It's what they call in Italy "Mare e Monti" or the sea and the mountains, mixing mushrooms and shrimps. For this recipe we will add a little bit of french cuisine by using cream which the italians hardly ever if not never use when cooking but for us it helps to bring together all the flavors. Enjoy this flavorful dish full of proteins and carbohydrates, perfect for athletes or for a ketogenic diet and......Buon Appetito!!!

Ingredients

  • Farfalle pasta or Bow Ties Pasta / 1 lbs
  • Shrimp tails / about 2 in. in size / peeled / 8 oz
  • Mushrooms(prohibited canned mushrooms!!) / sliced / 8 oz
  • Cooking Cream / 2 cups
  • Garlic / chopped / 1 tbsp
  • Parsley / chopped / 2 tbsp
  • Olive oil / as needed
  • Salt & Pepper / as needed

Directions

  • 1For the pasta. Heat a pot of water and bring to a boil.
  • 2To make the sauce. Heat a fairly wide searing pan to make the sauce. Why searing pan? because we need the widest possible area when we throw in the shrimp to cook and caramelize by touching the pan's bottom. Add 3 tbsp olive oil to the pan.
  • 3When the oil in the pan starts to fume, keep your head away from stove and throw in the shrimp. If done correctly this will cause a big flame (flambe in french) this is exactly what we want!! like I said before keep head back, enjoy the heat, and shake the pan to keep the flame alive as long as possible. Believe it or not this will give your sauce one of its most important flavors. If this part scares you, don't wait until the oil fumes to add the shrimps, that will do it. Once the flame disappears do not flip the shrimps until they have acquired some color on one side, 4min.
  • 4Add the mushrooms, garlic and parsley, mix well and let the juices come out and the flavors blend together, 6 min.
  • 5Add the cream, mix, bring to a boil and let it reduce a 1/3 down or about 12 min.
  • 6Salt & pepper to taste. Set aside
  • 7With the water boiling add the salt, enough to bring the salt level similar to a soup you would enjoy, don't be shy about it, do it the Italian way.
  • 8Add the pasta and wait the time given to you by the package indications.
  • 9Drain the water from the pasta, add some olive oil so it won't stick and serve right away with the sauce over it or on the side and........Buon Appetito!!
