A salad to remember!! If you wanted to make a stravagant salad for family or friends to impress and enjoy, this would be it. A refreshing salad with a mix of vegetables and lettuces, topped with shrimps, Couscous from the Middle East, and a wonderful anchovy, parsley and yogurt dressing. Absolutely delicious!!!   

Ingredients

  • Shrimp / small, cooked and peeled / size 51 or greater
  • Couscous / 6 oz uncooked
  • Romaine lettuce / thinly chopped 1/4 in. / 24 oz
  • Arugula / thinly chopped 1/4 in. / 8 oz
  • Tomatoes / diced 1/4 in / 8 oz
  • Cucumber / diced 1/4 in / 8 oz
  • Green Peppers / diced 1/4 in / 8 oz
  • Purple Onion / diced 1/8 in / 4 oz
  • Black Olives / diced 1/8 in / 8 oz
  • Yogurt plain / small 4 oz tub
  • Extra Virgin Olive oil / 4 Tbsp
  • Anchovies / 3 fillets
  • Parsley / finely chopped / 2 Tbsp
  • Water / 4 Tbsp.
  • Sesame seeds / 2 Tbsp

Directions

  • 1Heat up 1 cup of water until boiling, add salt to taste, and pour over the couscous. Let absorb for 1/2 hour, drain extra water through a sieve, add some cool water to stop cooking process and drain that water too. Drizzle with olive oil so it won't stick and place in fridge to cool down some more.
  • 2Let's continue with the rest. Wash well both the Romaine lettuce and the arugula if needed. Chop and mix both together. Set aside.
  • 3Continue cutting the rest of the vegetables; cucumber, tomatoes, green pepper, purple onion and olives and set aside individually.
  • 4Now let's make the salad dressing. Grab your wonderful blender and will put it to good use. Place in it the anchovy fillets, together with the yogurt, the olive oil, parsley, yogurt and water, and blend for 10 seconds at medium speed. Now you have a wonderful salad dressing. To season to taste with salt and pepper is not only allowed but recommended.
  • 5We forgot the shrimp!! no we didn't,....grab your little ocean friends, rinse them in cold running water, and pat them dry.
  • 6Now you are going to get artistic. Grab a big bowl sufficient enough for mixing all the ingredients.
  • 7Add to it.....everything!! start with the lettuce and God blessed arugula, the chopped vegetables, couscous and shrimps. Sprinkle half of the dressing, toss and mix well, and add the rest of the dressing until you feel satisfied. For some it might be all of it for others less of it. Be your own master. You should have ONLY the sesame seeds left.
  • 8To serve on each plate, try to place first some mixed lettuce and on top the mixed vegetables and shrimp. Sprinkle on top the toasted sesame seeds. I said toasted because previously you had tossed around the seeds in a pan WITHOUT any oil, high heat until golden.
