Ingredients
- 1 Pack Bacon Bits, Cooked
- 1 Can Chick Peas, Drained and Rinsed
- 1 Can Red Kidney Beans, Drained and Rinsed
- 1 Can Cannellini Beans, Drained and Rinsed
- 1 Green Pepper, Chopper
- 1 Red Pepper, Chopped
- 1 Red Onion, Chopped
- 1 Packet Woolworths 7 Grain Medley, Heated as per Instructions
- 1 Can Whole Corn Kernels, or 350g Frozen Kernels(Cooked)
- Vinaigrette Ingredients
- 1/2 Cup Olive Oil
- 1/2 Cup Red Wine Vinegar
- 2T Lime Juice
- 1T Lemon Juice
- 2T White Sugar
- 1T Salt
- 2t Minced Garlic
- 1/4 Cup Fresh Coriander, Chopped
- 1/2t Ground Cumin
- 1/2t Ground Black Pepper
- 1 Dash of Tobasco
- 1/2t Chilli Powder
Directions
- 1Add all the vinaigrette ingredients togther. Whisk well and refridgerate for at least 30 mins.
- 2Mix all the salad ingredients together.
- 3Pour the vinaigrette over the salad and toss to coat. Chill thoroughly and serve cold.
