Ingredients

  • 1 Pack Bacon Bits, Cooked
  • 1 Can Chick Peas, Drained and Rinsed
  • 1 Can Red Kidney Beans, Drained and Rinsed
  • 1 Can Cannellini Beans, Drained and Rinsed
  • 1 Green Pepper, Chopper
  • 1 Red Pepper, Chopped
  • 1 Red Onion, Chopped
  • 1 Packet Woolworths 7 Grain Medley, Heated as per Instructions
  • 1 Can Whole Corn Kernels, or 350g Frozen Kernels(Cooked)
  • Vinaigrette Ingredients
  • 1/2 Cup Olive Oil
  • 1/2 Cup Red Wine Vinegar
  • 2T Lime Juice
  • 1T Lemon Juice
  • 2T White Sugar
  • 1T Salt
  • 2t Minced Garlic
  • 1/4 Cup Fresh Coriander, Chopped
  • 1/2t Ground Cumin
  • 1/2t Ground Black Pepper
  • 1 Dash of Tobasco
  • 1/2t Chilli Powder

Directions

  • 1Add all the vinaigrette ingredients togther. Whisk well and refridgerate for at least 30 mins.
  • 2Mix all the salad ingredients together.
  • 3Pour the vinaigrette over the salad and toss to coat. Chill thoroughly and serve cold.
