Ingredients
- 2 cups sugar
- 1 3/4 cup all purpose flour
- 1/2 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup milk
- 1/2 cup oil
- 2 tsp vanilla extract
- 1 cup boiling coffee
- For the frosting:
- 8 ounce butter
- 8 ounce cream cheese
- 1 1/2 tsp vanilla essence
- 1 tsp milk
- 1/2 cup icing sugar or more
Directions
- 1Preheat oven to 175 deg celcius.
- 2Beat together flour, cocoa, baking powder, baking soda, milk, eggs, oil, sugar, salt and vanilla.
- 3Stir in boiling coffee.
- 4Line the cupcake tray with cupcake liners. This will make about 20 to 24 cupcakes. Pour in till 2/3 of cupcake liner is filled.
- 5Bake for 20 mins or more till done.
- 6For the frosting, beat together slightly melted butter and cream cheese together. Add in vanilla and milk. Gradually add icing sugar and beat till fluffy.
- 7After the cupcakes are at room temperature, apply the frosting. Decorate with sprinkles.
