Sweet yellow rice (Zarda) is delicious and healthy food. In Pakistan, India and Bangladesh like to use this recipe in party or occasion. And this is traditional food in Pakistan.
Ingredients
- 200g uncooked white rice
- ¼ tablespoon orange food color
- 2 cups warmed milk
- ½ teaspoon saffron
- 3 tablespoon butter
- 4 cups white sugar
- 1’’ cinnamon stick
- 4 green cardamom pods
- 1 tablespoon raisins
- 1 tablespoon cherry (Chopped is best)
- 1 tablespoon almonds (chopped)
- 1 tablespoon walnuts (chopped)
- 2 tablespoons grated orange zest
- Salt
Directions
- 1Wash the rice in some changes of water. Place the rice in a bowl with water to cover and soak 1 hour.
- 2Mix saffron in the milk; stir it about until the threads turn some shades darker, then set aside.
- 3Heat the butter in medium heat. When it is hot, put the green cardamom pods and cinnamon stick, and stir them gently. Put in the rice, and stir the rice for about 2-3 minutes. Reducing the heat slightly if it starts to catch. Add water (250-325 ml), orange food color and the salt.
- 4Now increase the heat (medium heat) and gently stir and cook the rice until whole water is absorbed. Pour in the saffron milk, cherry, almonds, walnuts, orange zest and sugar.
- 5Cover very tightly and put the pan in the oven for about 30 minutes.
- 6Remove the rice from oven and stir. Removing the cinnamon stick and cardamom and serve.
