Ingredients
- 1/2 cup fresh pears
- 1/3 cup brown sugar
- 2 oz water
- 1/8 tsp cinnamon
- 1/2 tsp vanilla
- 1 tsp butter
- 1 Tbsp cornstarch diluted with water
- 1 cup a.p. flour
- 1/2 tsp salt
- 1/3 cup well-known chilled butter flavor crisco shortening
- 2 to 4 tbsp ice cold water
Directions
- 1In a small pot, place pears, brown sugar, cinnamon, vanilla and water in the pot and bring to a boil.
- 2Add the cornstarch diluted with water, simmer for 4 to 5 minutes.
- 3Add butter and set filling a side.
- 4In a bowl place flour, salt and shortening.
- 5Cut shortening into flour, until it the size of a pea.
- 6Add ice water to the flour & shortening mixture to form a dough.
- 7Divide dough dough into two pieces, wrap in plastic wrap and place in the refrigerator for 15 to 20 minutes.
- 8Dust your work surface with flour, roll out one piece of the dough to the side 2" larger than your baking dish.
- 9Line your dish with the pie dough. Fill the dough lined dish with the reserved filling.
- 10Dust the work surface again with flour and roll out the second piece of pie dough 1" larger than your baking dish.
- 11In a cup beat 1 egg, brush the egg on the edge of the dough line cobbler
- 12Place the second piece of dough over the dish.
- 13Take a butter knife and trim the dough around the cobbler. Cut two small air vents in the middle of the top dough.
- 14Brush the top of the cobbler with egg.
- 15Place the cobbler on a cookie sheet and bake at 350 degrees for 35 to 40 minutes until golden brown.
