Who doesn't love mac n cheese? This is a twisted mac n cheese recipe, its little time consuming but the end product is worth the hard work. Its the perfect dish to impress your guests. I have used cheddar and mozrella cheese. You can also use parmesan cheese.

Firstly, we will make the chicken mixture. In a wok, add butter on medium heat. After it melts, add in finely diced onions.

Add chicken, chicken stock cube, mustard sauce, red chilli flakes, black pepper powder and salt. Mix in the olives and mushrooms. Roughly slice some cheddar cheese and add to the wok.

After the cheese melts add flour and milk. Stir till the mixture thickens. Turn the stove off.

Toss in the boiled macroni. Spread this mixture on a casserole/ pyrex dish. Pour milk, this will keep the mac n cheese creamy and moist while it is being baked.

Layer it with pasta sauce. Thats the twist !

Lastly add shredded mozzarella cheese on top. Be generous :)

Bake at 180 deg celcius for about 40 min and till the cheese turns golden brown. Garnish with oregano. Serve hot. Enjoy!

Ingredients

  • 300 g chicken cut into small cubes
  • 50 g butter
  • 1 onion finely chopped
  • 1/2 cup olives sliced
  • 1/2 cup mushrooms sliced
  • 1 tsp red chilli flakes
  • 1/2 tsp black pepper powder
  • 1 chicken stock cube
  • 2 tbsp mustard sauce
  • 1 tsp ginger chopped
  • 1 tsp garlic chopped
  • 50 g all purpose flour
  • 1 ltr milk
  • 70 g cheddar cheese roughly sliced
  • 250g Shredded Mozarella cheese
  • 300 g boiled macroni
  • 450 g Pasta sauce
  • Oregano for garnishing

Directions

  • 1Preheat oven at 180 deg celcius. Make the chicken mixture. In a wok, melt butter on medium flame. Saute onions till they turn transparent.
  • 2Add chicken, ginger, garlic, chicken stock cube, mustard, red chilli flakes, black pepper powder, salt, mushrooms and olives.
  • 3Stir it and add cheddar cheese followed by flour and 700 ml milk. Cook till the sauce thickens.
  • 4Toss the macroni with the mixture. In a pyrex dish, spread the chicken and macroni mixture. Pour about 300 ml milk.
  • 5Top it up with pasta sauce followed by Mozarella cheese. Bake for 40 mins till the cheese turns golden brown.
  • 6Garnish with oregano. Serve hot. Enjoy!
