Ingredients

  • 2 large handfuls of romaine lettuce
  • Half a cucumber
  • Handful of cherry tomatoes
  • 2 medium/ large tomatoes
  • 1 red onion
  • Handful of green olives
  • 3 tbpsn olive oil
  • 2 tspn red wine vinegar
  • 1 tbpsn dried oregano
  • Juice of half a lemon
  • Half a block of feta cheese
  • Ground black pepper

Directions

  • 1Add the lettuce, tomatoes, cherry tomatoes, onions, cucumber, feta and olives to a large mixing bowl. Pour in the olive oil, red wine vinegar and lemon juice. Add the black pepper and dried oregano and toss the salad so that everything is mixed well.
  • 2For the griddled pittas: heat a griddle pan and once hot cook the pittas on each side for around 3 minutes (you may have to do in batched depending on the side of your pan). Cut into slices and then lightly drizzle the olive oil on top. Scatter some dried oregano on top.
  • 3Plate up the salad or transfer to a large salad bowl. Enjoy!
