- Butter - 150g
- Caster Sugar - 165g
- Lime Zest - 1 Tbsp
- Vanilla Extract - 1 Tsp
- Chai Ice Cream
- Soya Cream - 500ml
- Milk - 250ml
- Chai Tea Powder - 4-5 Tbsp
Directions
- 1Make the cake, beat the butter, sugar, lime zest and vanilla until pale and fluffy. Add the eggs one at a time until well incorporated. Fold the nuts through until well combined. Line a loaf tin with baking paper, add the cake mix and bake at 150°c Fan for 1 hour. It may need 10 minutes extra. Let the cake cool in the tin before you turn it out.
- 2The ice cream is the easiest ever. Add all the ingredients into a pan, taste to see if any extra chai tea powder is needed. Bring to a boil let cool. Transfer to an ice cream machine and churn.
