Mackerel is loaded with Omega 3 fatty acids that are good for health, combined with other vitamin rich ingredients this recipe makes a delicious lunch If you can’t find smoked mackerel, replace it with another smoked Omega 3 rich fish like smoked salmon, just make sure it is hot smoked for this recipe.

Ingredients

  • 400 gr hot smoked mackerel
  • 100 gr red onion (cut into half rings)
  • 12 cherry tomatoes (cut in half)
  • 2 spring onions (finely sliced)
  • 1 head salad of your choice (I used lettuce)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp natural brown sugar
  • 2 tbsp chopped parsley
  • Sea salt / cracked black pepper

Directions

  • 1Pre-heat an oven to 150 degrees Celsius ( 300 F)
  • 2Spread the tomato halves on a baking tray, sprinkle with some olive oil and bake for 10 minutes in the oven
  • 3Combine the olive oil, lemon juice and brown sugar with the parsley in a small bowl
  • 4Place the smoked mackerel in another bowl, add the onion and the dressing, combine
  • 5Divide the lettuce over plates top with equal parts of the mackerel mix.
  • 6Lastly add the fried tomatoes
  • 7Garnish with the sliced spring onions
