Ingredients
- 400 gr hot smoked mackerel
- 100 gr red onion (cut into half rings)
- 12 cherry tomatoes (cut in half)
- 2 spring onions (finely sliced)
- 1 head salad of your choice (I used lettuce)
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp natural brown sugar
- 2 tbsp chopped parsley
- Sea salt / cracked black pepper
Directions
- 1Pre-heat an oven to 150 degrees Celsius ( 300 F)
- 2Spread the tomato halves on a baking tray, sprinkle with some olive oil and bake for 10 minutes in the oven
- 3Combine the olive oil, lemon juice and brown sugar with the parsley in a small bowl
- 4Place the smoked mackerel in another bowl, add the onion and the dressing, combine
- 5Divide the lettuce over plates top with equal parts of the mackerel mix.
- 6Lastly add the fried tomatoes
- 7Garnish with the sliced spring onions
