The presence of greens in my food is always  a very important agenda. I try to incorporate as much veggies as possible in our non vegan diet, mainly when there is a big protein intake . We live in South Korea where we get plenty of seafood but, we eat very few of it instead we prefer eating fresh water fishes. Again , fresh water fishes are not much available, so we end up eating lot of veggies, chicken ,mutton and some frozen fresh water fish from international stores. Well, thats our story of home  food habits in the kimchi land, though we eat lot of Korean food outside in restaurants...love lot of their dishes .

Spinach is found here abundantly throughout the year and all are aware of its nutrition power house. In India it is consumed all over the country and mainly cottage cheese in spinach is one of the most popular dish among vegans. This time I thought of cooking chicken with spinach by not hampering or mixing the taste of the respective main two ingredients. The recipe is simple and could be cooked very fast and easily. If you are non vegan , you will surely love it. 

Spinach Chicken

Ingredients

  • 1kg Chicken, 3tablespoon ginger garlic paste, 7tablespoons oil, 1big lemon, salt as per taste.
  • 500gms spinach leaves, 2 onions,1big tomato ,1teaspoon coriander powder, 2teaspoon chilli powder,2tablespoons ghee or clarified butter

Directions

  • 1Take 1kg clean chicken ina bowl. Add 2 tablespoons ginger garlic paste , 4 table spoon oil, 1teaspoon chilli powder and salt as per taste. Squeeze out all the lemon juice and add to it. Mix everthing well and keep it marinated for minimum 1hr. Longer the marination time...better the taste.
    Then grill the chicken on both sides untill ten der using a griller.
  • 2Wash the spinach leaves properly and keep aside. In a deep pot, boil some water and add the spinach leaves in it. Keep the leaves in boiling water for 2 to 3 minutes . Remove the leaves from boiling water and put in ice cold water to prevent further cooking from the heat within. Now make a paste of the cooked leaves in a mixing jar.
  • 3In a cooking pan add 3 tablespoons oil and heat. Then add 1 chopped onion and saute for minutes. Now add 1 chopped tomato and saute until oil oozes out. Next add 1tablespoon ginger garlic paste , 1 teaspoon coriander powder, 1 teaspoon chillipowder and saute until oil oozes out. Once all these spices are cooked add the spinach paste and bring to boil without covering the lid. Then add the grilled chicken to it. Served it in a plate and add some heated ghee on top.
    Spinach chicken is ready...goes perfect with rice , Indian bread/roti and naan.
