As Ramadan is just round the corner and so are ready to fry freezer- preps going on at most Muslim households, this is one recipe that has added on to the variety in my freezer this year. Melt in the mouth chicken-veggies bound together with creamy white sauce, coated with crispy vermicelli makes it a easy and less oily alternative to the usually heavy and oily ifthar snacks. Without much a do lets directly get on to the recipe.

Ingredients

  • Chicken breast- 400 gms
  • Onion- 1 small chopped
  • Potatoes- 2 medium sized
  • Coriander leaves- handful chopped
  • Sweet corn- 1/2 cup
  • Cabbage- 2-3 tbsp chopped(optional)
  • French beans- 6-7
  • Carrot- 1 cup grated
  • Egg- 1
  • Cumin powder- 1/4 tsp
  • Garam masalapowder- 1 tsp
  • Black pepper powder- 1 tsp
  • Green chillies chopped- 2-3
  • Ginger garlic paste- 1 1/2
  • All purpose flour- 1 tbsp
  • Turmeric - a pinch
  • Salt
  • Vermicelli to coat
  • Oil to Shallow fry.
  • Milk cup -1/2cup
  • Cardamom- cloves- 2 pieces,
  • Cinnamon- 1

Directions

  • 1Boil chicken, Potato with 1 pinch of turmeric, 2 cardamom, 2 cloves and 1 inch cinnamon. Once done drain the chicken and save some stock for white sauce.
  • 2Now to make the white sauce, in a saucepan, add 1 tsp butter to the saucepan followed by flour. Saute for a minute and slowly add the milk and cook till the sauce thickens.
  • 3Heat oil in a pan. Add, green chillies and ginger garlic paste, saute till raw aroma goes. Add chopped onion,french beans, carrot, sweet corn, cabbage and coriander leaves along with salt and pepper. Saute for few mins and take off heat.
  • 4Assembling: In a bowl add shredded chicken,(blitz in a chopper for 2-3 secs) white sauce, Veggie mixture, potatoes, salt, pepper and garam masala. Mix all the ingredients to form a smooth dough. Shape into desired shaped cutlets, dip in egg, roll it over crushed vermicelli and coat evenly. Shallow fry on both sides until the vermicelli is golden brown throughout. You can coat them with vermicelli and freeze and store them to shallow fry later. Serve hot with tomato ketchup, chutney or any dip of your choice.
  • 5Note- you can add or omit and have a mix and match of your favorite vegitables into the kebab and have your own variation.
