 Forget your basic scrambled eggs!  If you're looking for a breakfast that's bursting with flavor and guaranteed to warm you from the inside out, then you need to try Menemen.  This iconic Turkish dish is more than just a breakfast – it's an experience. An experience of a vibrant medley of juicy tomatoes, sweet peppers, and fragrant spices, all simmered together in a rich, slightly spicy sauce.  Then, just as it reaches its peak of flavor, lightly whisked eggs are drizzled over the mix, creating a symphony of textures and tastes. That's Menemen in a nutshell.

Think of it as a Turkish take on shakshuka, but with its own unique personality.  It's rustic, comforting, and incredibly easy to customize to your own preferences.  Want a little extra heat?  Add an extra pinch of red pepper flakes.  Love the taste of onions?  Sauté some up before adding the other ingredients and veggies if you like.  The possibilities are endless! Get ready to ditch the boring breakfast routine and embrace the vibrant flavors of Turkey! 


Ingredients

  • Olive oil- 2tbsp
  • Butter- 2 tbsp
  • Sweet or mild hot green peppers- 2-3 sliced in roundrels
  • Onion- 1medium (chopped) -optional
  • Garlic- 2 cloves (sliced) -optional
  • Tomatoes- 2medium(grated or processed in a chopper)
  • Feta cheese/grated Parmesan/mozzarella- 1/3 cup
  • Eggs- 3large
  • Salt- to taste
  • Black pepper powder- to taste
  • Red chilly flakes- to season
  • Fresh mint leaves/ parsley- chopped to garnish

Directions

  • 1In a pan, heat butter and olive oil. Add the chopped onions and sliced garlic. Sauté for 2 mins. Add the chopped green peppers and sauce till slightly brown.
  • 2Add the grated tomatoes along with salt and cook until they are well done. Lovwer the heat, add black pepper and crushed red chilly flakes to taste. Spread out the mixture evenly in the pan.
  • 3In a bowl break the eggs and whisk lightly. Toss it over the tomato mixture. Drizzle the desired cheese evenly on top.
  • 4Allow to cook on low flame, with partially covered lid till egg is cooked yet looks saucy.
  • 5Serve hot Turkish menemen with sliced bread, sour bread or baguette and Turkish coffee for breakfast or brunch. Afiyet olsun! Enjoy.
