Smoosh the meatloaf mixture in to the silicon molds. You can pre-grease them, but I also experimented without, and there was no sticking whatsoever.
Ingredients
- 2 large eggs
- 200g tomato paste
- 1 teaspoon dried Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- 1 cup bread crumbs or quick cooking oats
- 2 medium carrots
- ⅓ cup grated Parmesan cheese
- 700 g lean ground beef
- Optional, marinara, ketchup, or hot sauce to top off with before serving.
Directions
- 1Heat oven to 180 C. Lightly grease 12 muffin cups or 12 silicon baking cups with vegetable oil/cooking spray and set aside.
- 2Whisk the eggs, then mix in tomato paste, Italian seasoning, salt, pepper, onion powder, and garlic powder in a large bowl until combined. Stir in the bread crumbs {or oats}, carrots, and Parmesan cheese.
- 3Mix in the ground meat, using your hands to combine well, then divide the meat mixture evenly among the muffin tins/silicon cups.
- 4Bake for 25-30 minutes, or until an instant-read thermometer registers 70 C.
- 5Cool before serving with optional marina, ketchup, or hot sauce.
