Meatloaf Muffins

Smoosh the meatloaf mixture in to the silicon molds.  You can pre-grease them, but I also experimented without, and there was no sticking whatsoever.

Meatloaf Muffins

Ingredients

  • 2 large eggs
  • 200g tomato paste
  • 1 teaspoon dried Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 cup bread crumbs or quick cooking oats
  • 2 medium carrots
  • ⅓ cup grated Parmesan cheese
  • 700 g lean ground beef
  • Optional, marinara, ketchup, or hot sauce to top off with before serving.

Directions

  • 1Heat oven to 180 C. Lightly grease 12 muffin cups or 12 silicon baking cups with vegetable oil/cooking spray and set aside.
  • 2Whisk the eggs, then mix in tomato paste, Italian seasoning, salt, pepper, onion powder, and garlic powder in a large bowl until combined. Stir in the bread crumbs {or oats}, carrots, and Parmesan cheese.
  • 3Mix in the ground meat, using your hands to combine well, then divide the meat mixture evenly among the muffin tins/silicon cups.
  • 4Bake for 25-30 minutes, or until an instant-read thermometer registers 70 C.
  • 5Cool before serving with optional marina, ketchup, or hot sauce.
