My family and I love to get together and celebrate life as a group. Usually, this is done over delicious, home-cooked comfort food. Food brings us together in times of sadness and in times of joy. I have quite a big family, so you can imagine the number of get-togethers we need to cater for.
One of my favourite dishes to take to a family get-together is this simple carrot and potato bake. I learned how to make it from my mother a few years ago and it has even won over my anti-veggie stepfather. I made this for my grandfather’s 74th birthday party the other day and it was quite the hit.
Ingredients
- 14 ounces of potatoes
- 14 ounces of carrots
- 1 chilli
- 2 bunches of spring onion
- 1 egg
- Salt
- 2 ounces of cheese (I prefer cheddar, but whatever your preference is)
Directions
- 1Peel and chop potatoes and carrots in uniform sizes (this will ensure that everything is cooked evenly). Bring water to boil in a large pot. Add salt and leave to cook until al dente. Drain any excess water before adding a chopped chilli and finely sliced spring onion.
- 2Then, mash carrot and potato mixture with a potato masher to break up the pieces. Be careful not to make it too fine as a clear separation between carrot and potato is desired. Add salt and pepper to taste
- 3Spoon mixture into a greased casserole dish or muffin pan if individual portions are desired.
- 4Top off with cheese before baking in the oven at 374 °F for 10 to 15 minutes.
- 5Serve warm as a wonderful side dish.
