I have always loved peppers, especially yellow and red peppers. I also love pizza and unfortunately due to medical reasons I am forced to deny myself a slice most of the time. Luckily, I get a kick out of making healthier alternatives to some of my favourite unhealthy foods. This is something I made on a whim after searching through the fridge looking for inspiration.
This is super quick and easy to make. I know the recipe says two servings, but I ended up eating everything thanks to my anti-pepper boyfriend. Well I guess it was his loss as I ate like a Queen.
Ingredients
- 1 large red/yellow bell pepper
- 1 ounce feta cheese
- two tablespoons olive oil
- black pepper
- salt
- oregano
Directions
- 1Preheat the oven at 390 ºF and slice bell pepper in half.
- 2Remove the center as well as the seeds and slice into quarters before placing them on a baking tray.
- 3Pour one tablespoon of olive oil over bell peppers and place in the oven for roughly 10 minutes.
- 4Remove peppers from the oven, crumb feta cheese and divide equally between the pepper quarters.
- 5Top off with the rest of the olive oil and salt, pepper and oregano to taste.
- 6Place back in the oven, but this time on grill for another 5 minutes.
- 7Serve warm as a lovely side dish.
