Fresh tropical fruit, garlic, ginger, mint and cilantro make this a refreshing and multi-purpose salsa.
Ingredients
- 1 mango, peeled and chopped in ½
- 1 cup pineapple, chopped in ½
- ½ red bell pepper, seeded and chopped in ½
- Kernels from 1 ear white corn
- 1½ T fresh ginger, peeled and minced
- 1 large handful cilantro, washed and chopped
- 1 large handful fresh mint, washed and chopped
- Juice and zest from 1 lime
- Couple dashes of ancho chili powder (to taste)
- Salt and pepper (to taste)
Directions
- 1Mix all ingredients together in a bowl. Taste to see if more lime, chili powder, salt and pepper are needed.
