This is my mum's recipe of chicken corn soup. When I used to come back home from hostel, my mum would make this delicious comforting chicken corn soup. It would uplift me spiritually and physically. Its like medicine healing me with every hot bowl.
Well, I still can't make it taste exactly the same as my mum's but I will share her recipe with you.
In a pot, saute chicken strips in 1 tbsp oil with garlic and ginger on medium heat. Saute for 5 mins or more till completely cooked. Remove from pot and keep aside.
In the same pot, add chicken stock, corn, chicken stock cubes, chicken strips, oats, salt and pepper.
After the soup starts boiling, add cornflour and stir. When the soup thickens, pour in the blended eggs slowly into the pot. Stir quickly so that the egg scatters in the soup.
Turn off the stove and add the spring onions. Give it a stir.
Serve hot with crotons. Enjoy!

- 400g Boneless chicken cut into strips
- 1 tsp Garlic paste
- 1 tsp Ginger paste
- 340g tin Corn
- 3 tbsp Cornflour
- 6 cups of Chicken stock
- 2 Beaten egg
- 2 Chicken stock cube
- 6 tbsp Oats
- Salt to taste
- 1 tsp black pepper powder
- 1 cup Spring onions chopped (optional)
Directions
- 1In a pot, saute chicken strips in oil on medium heat with ginger, garlic and a pinch of salt and pepper. Remove from pot when the chicken is cooked and keep aside.
- 2In the same pot, add chicken stock, chicken stock cubes, black pepper powder, oats, corn, chicken strips and salt. Let it boil.
- 3Add cornflour, stir till the soup thickens. Pour in the beaten egg slowly into the pot and stir quickly so that the egg scatters in the soup.
- 4Turn off the stove and add spring onions.
- 5Serve hot with crotons. Enjoy!
