Chicken is one of the Greeks favorite protein, but somehow we Greeks, are not very keen on dry pieces of cooked chicken, we love sauces and herbs too, when I invite friends over for a light dinner I always like to include this delicious recipe of mine....I got inspired in the earlier years from my mums similar dish and I turned this traditional recipe to a more modern and new way of cooking this dish...this dish included the majority of the local organic vegetable and can be eaten with any starch, or side dish, as the amount of vegetable together with the pieces of chicken can make this a whole meal.....I serve this with a glass of sparkling chilled white wine and really make everyone happy to eat something so healthy......
