Chicken is one of the Greeks favorite protein,but somehow we Greeks, are not very keen on dry pieces of cooked chicken, we love sauces and herbs too, when I invite friends over for a light dinner I always like to include this delicious recipe of mine....I got inspired in the earlier years from my mums similar dish and I turned this traditional recipe to a more modern and new way of cooking this dish...this dish included the majority of the local organic vegetable and can be eaten with any starch, or side dish, as the amount of vegetable together with the pieces of chicken can make this a whole meal.....I serve this with a glass of sparkling chilled white wine and really make everyone happy to eat something so healthy......
Ingredients
- 800 gr chicken fillet
- 1 medium size dry onion
- 1 small garlic
- 2 medium size zuchini
- 1 red round pepper
- 1 yellow round pepper
- 1 orange round pepper
- 2 medium size fresh tomatoes
- 2 spring onions
- 1 cup mint water
- 1 teaspoon fresh ginger
- 1 teaspoon of cinnamon powder
- 1 tablespoon Extra virgin Greek olive oil
Directions
- 1wash vegetable and cut in thin stripes shape
- 2cut chicken filet in thin stripes shape too
- 3place the olive oil with the chicken and the spices on a large pot and start cooking, on medium fire, when the chicken turns gold color add the vegetable and keep mixing all the ingredients
- 4In a cup mix fresh mint leaves with hot boiling water let it stand for 5 minutes, then add this to the dish, let them all simmer until all are cooked and moist
