The other day with some friends we decided to travel on a day trip to a near by small pretty Greek island called Aegina....this is an island that holds lots of our memories as children , since this was the place we will all go together as teenagers to swim , eat Greek meze , and return home just on time for dinner ....whenever we go to the Aegina island we will come back bringing with us lots and lots of pistachio nuts since the island is number one area with pistachio trees all over Greece...and although my favorite ones when I was younger were the roasted and salted version, now days, as the years go by, I prefer the roasted , but not salter version, getting older I m more health conscious , perhaps,....something else we like to bring back from this island are pots of fresh basil, and of course upon return we have to prepare something to eat for dinner.....recently I tried a unique fresh salad that I would like to share with you and hope you will try it...is simple, and very easy to make....
Ingredients
- 4 medium size cucumbers
- 50 gr basil leaves
- 2 tablespoons extra virgin Greek olive oil
- 180 gr pistachio nuts
- 1 cup Greek yogurt
- 1 whole green salad
- 1 spring onion
- 1/4 cup fresh lemon juice
- salt, black pepper
- 1/4 tablespoon garlic powder(optional)
Directions
- 1mix greek yogurt with lemon and olive oil, add salt and black pepper to taste and garlic powder(optional)
- 2wash the salad and dry it, wash cucumbers and cut them into thin slices and the spring onions too
- 3in a large ball place the salad, together with half of the basil leaves, on top the spring onion and the cucumbers
- 4add the pistachio nuts, keep some for the decoration of the salad
- 5cover with the yogurt mixture
- 6decorate with the rest of basil leaves and some pistachios
