Summer is allmost gone by this time of the year... thanks to the pleasant rainy season..which has set the mood to welcome autumn. And the best thing about summer for my son is abundant amount of  water play time and icecreams!!!!! Whereas in other seasons here in South korea...I am bit scared to give that permission. 

Apart from various icecream parlors here I have introduced our Indian traditional style icecream known as Kulfi. It is a frozen dairy dessert with lots of nutrition which is further enhanced by various nuts and other ingredients. Kesar pista Kulfi

Kulfi is very easily available in India..but to get the authentic one...need to do little bit of research. My all time memory of childhood kulfi is at my maternal grandparents home. OH!!!...Can never forget that. It was my moms maternal uncle's home in Kolkata -Boubajar. My moms aunt..my grand mom...she  is a gem of a person. Even 3 decades back she was a lady of this present time...though her education was not more than middle school. Her dressing style,talking style and her nature of mingling with all age is just awesome. Love her. And not to miss the awesome kulfi she used to prepare.

Here I have tried to replicate the flavour and taste Which I always enjoyed and love.

Ingredients

  • 2litres milk, 1 cup sugar, 15 almonds
  • 15 pistachio,
  • 2 pinches of saffron.

Directions

  • 1Take a deep bottom pot. Boil 1 litre milk ,then lower the flame and keep stirring to avoid milk getting stuck to the bottom.keep stirring until the milk becomes very thick and allmost 300ml.
  • 2In another deep bottom pot boil other 1 litre milk. Then add finely chopped 10 almonds and 10 pistachio. Add 1 pinch of saffron and sugar. Lower the the flame and keep stirring until the milk is 600 ml.
  • 3Then add that thickened 250ml milk or you can say mawa to this 600ml milk. Stir for sometime and cool it untill room temperature.
  • 4Next pour it in a kulfi container and keep in freezer for 10 hrs. If you do not have kulfi case then you can use small paper cups and icecream sticks.
  • 5In that case after pouring the milk in cups ,freeze for 2hr and then insert the icemream sticks...so that the sticks will be in the centre as by that time the liquid will be frozen enough to hold the stick in centre. Then again leave for 8hrs.
  • 6Before serving garnish with again remaining chopped almonds ,pistachio and saffron.
