Mango..the most love fruit in my home. My Nilabh is ever ready and can have it anytime.. sweet or sour..doesn't matter. During early years semolina cooked in milk with banana or steemed apple was his everyday snack. Now when I find him one of the most energetic kid among his peers, thought of making the same snack item with extra nuts and mawa which can give that extra boost needed and also will be interesting for him
Ingredients
- 1 cup semolina
- 1 medium size sweet mango
- 4 table spoon sugar or as per taste
- 7/8 cashew nuts, 4/5 almonds, 4/5 pista
- Saffron 2 pinches
- 3 tablespoon ghee
Directions
- 1In a deep bottom pan boil 500ml of milk. Keep stirring until it thickens to 40%.
- 2Beside, on the other stove keep a pan, put 1 tablespoon ghee. Once hot add cashew nuts and almonds. Fry for 1 min and remove. Careful not to over fry them, just until cashew nuts turn golden. remove the nuts and put in that boiling milk. Also add a pinch of saffron .After the milk is all most reduced to 40% add smashed mango and few small pieces to it.
- 3Now in the same pan add rest of the ghee, once hot add semolina and fry for 4mins. Then add the thickened milk mix , remaining 250ml milk and keep stirring to make it dry but not very dry...should have some moisture.
- 4Then u can either give shape or just eat it in a bowl. Sprinkle remaining saffron and pista pieces on top to garnish.
