Just when you thought chicken and cream were already a match made in heaven, there came along Parmesan to put a ring on it and voila,”Marry me chicken” was born! This dish has been throwing quite a feast on social media from the past few years. If you are still wondering what’s with that name? Here is an extract from an article on  “Eater.com”.

 The name for “Marry Me Chicken”, Lindsay Funston’s 2016 recipe for Delish, came about accidentally. After cooking the skillet chicken with sun dried tomatoes, herbs, and cream, “Ms. Funston’s video producer took a bite and declared, ‘I’d marry you for that chicken!’” says the New York Times. Again, no intent, just a joyous reaction that sparked the name.

This effortless dish comes together with limited ingredients, a promised complement and demand for more, once served. You can pair it up with some bread, rice, pasta or simply mash potatoes like I did. Go ahead say “cheese” or just say “marry me” chicken, and as you stir it up, watch it become everyone’s hot favorite. 

Ingredients

  • Chicken marinade
  • Chicken breast- 3 sliced thin lengthwise (skinless)
  • Ginger garlic paste- 1tbsp
  • Onion powder- 1tsp
  • Black pepper-1/2tsp
  • Salt- 1/2tsp
  • All purpose flour- 6tbsp
  • Butter- 2tbsp (unsalted)
  • Olive oil- 2tbsp
  • Sauce
  • Olive oil- 1/2 tbsp
  • Garlic- 3-4 cloves (minced)
  • Heavy cream- 1cup
  • Chicken stock- 1cup
  • Parmesan cheese- 1/2cup (grated)
  • Oregano-1/4tsp
  • Thyme- 1/4tsp
  • Sundried tomatoes- 1/3cup (chopped)
  • Chilli flakes- 1tsp
  • Fresh basil/parsley leaves- a tbsp for garnish
  • Black pepper- to taste
  • Salt-to taste.

Directions

  • 1In a bowl add ginger garlic paste, onion powder, black pepper, salt and mix. Toss in the chicken breast and allow to marinate for about 10 mins.
  • 2In a flat plate add 6 tbsps of all purpose flour. Dredge the chicken slices over the flour and coat evenly.
  • 3In a saucepan heat 2tbsp olive oil and 2 tbsp butter. Fry the chicken slices until crispy golden on both sides.(about 4 mins on each side) Don’t overcrowd the pan, fry it in batches to ensure it is evenly golden brown.
  • 4Once done, take chicken off heat and keep aside. Wipe off any burnt crumbs from the saucepan with a kitchen towel.
  • 5In the same saucepan, heat 1/2 tbsp of olive oil. (Add a splash of the sundried tomato oil for extra flavor) Add the minced garlic and saute for few seconds.
  • 6Pour in the chicken stock, allow to de glaze by scraping off any caramelized bits from the pan. Pour the heavy cream along with grated Parmesan, stir well and let it simmer for few mins.
  • 7Add the oregano, chilli flakes and thyme. Check seasoning, add pepper and salt if needed. Allow to simmer for a min.
  • 8Add the fried chicken slices and chopped sundried tomatoes to the sauce. Simmer for few mins.
  • 9Take off heat and garnish with chopped parsley or basil leaves. (You can add some water and adjust the consistency to your liking based on what you are serving it with.) Serve hot with bread, over rice, pasta or mashed potatoes and say Marry me!!
