It's a rice dish. Very quick and easy to prepare. Very nutritious, with lots of vegetables...........
Ingredients
- 3 cups of jasmine fragrant rice
- Carrot(Diced)
- Green Peas
- Sweet Corn
- Red Bell Pepper
- Green Pepper
- Onions(Chopped)
- Runner Beans(Diced)
- Chicken Breast(Chopped)
- Lean Minced Meat
- Spring Onions
- Beef or Chicken Stock
- 2 Bouillon Cubes
- 3 Teaspoons of Olive Oil
- Curry
- Thyme
- Tumeric
- Masala Spice
- Salt
- 2 Teaspoons of white pepper
- Egg
Directions
- 1Boil rice for 10 mins. Sieve and set aside.
- 2In a pan or wok , add two teaspoons of olive oil. Saute onions, green pepper and red bell pepper. Add diced carrot, green peas, runner beans and sweet corn . Season with boullion cubes, curry, thyme, tumeric ,masala spice and salt .Allow to cook for 2 mins. Set Aside
- 3In another pan , add a teaspoon of olive oil. Pour in chicken breasts and minced meat. Add 3 table spoons of chicken or beef stock and allow to cook for 5 mins.
- 4Pour cooked chicken breast and minced meat into vegetables and mix thoroughly.
- 5Add white pepper into mixture and allow to cook for 1-2 mins.
- 6In a wok, pour in cooked rice and add vegetable and chicken mixture.Break raw egg into it and mix well. Add spring onions and allow to cook for 2 mins.
- 7Serve and Enjoy!!!
