I love french toast, or eggy bread as many of us call it! It is so simple to make and a real treat topped with some smoked salmon and avocado.

Ingredients

  • 2 slices wholemeal bread
  • 2 medium free range eggs
  • 3 tbpsn semi skimmed milk
  • 2 small slices butter
  • Black pepper
  • Smoked salmon
  • 1 avocado
  • Juice of half a lemon

Directions

  • 1Heat the butter in a large frying pan. In a small bowl beat the eggs, milk and pepper. Cut each slice of bread in half and then soak the bread in the egg mixture.
  • 2Once the pan is hot add the eggy bread and cook on each side for around 3 minutes or until golden.
  • 3Lightly dry the french toast on some kitchen paper and then plate up. Top with the smoked salmon and a drizzle of lemon juice. Scatter some chopped avocado on top and enjoy!
