These baked burritos make a tasty Mexican meal with minimum fuss. If cooking with kids, get them to help with rolling up the burritos and spreading oil on the wraps before baking. Serve with guacamole.
Ingredients
- chilli con carne
- tomato salsa
- guacamole
- 1 small pot sour cream
- 150g basmati rice
- handful of grated mozzarella cheese
- 6 tortilla wraps
- 1 lemon
- fresh coriander
Directions
- 1Preheat the oven to gas mark 5/ 190 degrees celsius. Line a large baking tray with baking paper.
- 2Lay out one wrap and in the middle add 2 large tbspn of rice and the same amount for the chilli. Wrap and fold at the bottom and place in a large baking tray. Repeat the process until you have all 6 burritos.
- 3Spread the salsa over the burritos and scatter the grated cheese on top. Add the lemon slices on top and then place in the oven for around 20 mins.
