Lentils have numerous benefits for our health. They are an excellent source of fibre, folic acid and potassium all of which are good for our heart.

They are good for pregnant woman, the folate in lentils prevent birth defects. One cup of lentils provides almost 90pc of your folate needs for the day.

Lentils decrease risk of obesity, diabetes, heart disease, cancer and constipation due to being rich in many vitamins and minerals.

Its our superfood! I try to incorperate lentils atleast twice a week in our menu. These brown lentils daal are delicious, healthy, quick fix dish.

Firstly, boil brown lentils for about 10- 15 mins.

Meanwhile, in a pot saute onions and add tomatoes, curry leaves and all the spices. Cook for about 5 mins.

Mix the lentils into the pot. Cook for another 2 mins stirring occasionally. Serve hot with roti/ bread. Enjoy!

Ingredients

  • 1 cup brown lentils
  • 2 cups water
  • 1 tsp garlic chopped
  • 1 tomato chopped
  • 1 onion finely chopped
  • 5 curry leaves
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin seeds
  • 1 green chilli chopped
  • 2 tbsp oil

Directions

  • 1Boil lentils in water for about 10 -15 mins till they are cooked on medium heat.
  • 2In a pot, saute onion in oil on medium heat till they turn transparent. Add garlic, tomatoes, coriander, turmeric, cumin, red chilli, green chilli, salt and curry leaves. Cook for 5 mins.
  • 3Mix in the boiled lentils and cook for 5 mins while stirring occasionally. If you want more curry you can add half cup of water.
  • 4Serve hot with roti/ bread. Enjoy!
