My mom is an adventourous cook. She cooks anything and everything. Now when I am visiting her, I learnt that she makes soup out of goat neck bones. Well, the first time I was hesitant to taste the soup, I am not fond of goat neck or legs. But on her insistance, I tasted it and it was superb. It had the slightly thick soup texture with boiled vegetables- baby corn, beans, onions, carrots and mushrooms. My daughter loved it too, she would tell everyone 'My grandma makes such tasty soup!'
Its quick and easy to make, healthy and full of proteins. Cautionary note to the ones having uric acid problems, this might just increase your uric acid.
In a pressure cooker, add the neck bones with little oil, ginger and garlic. Saute for about 5 mins on medium heat.
Pour about a litre of water, black pepper powder, mutton stock cube and salt. Let it cook for about 20 mins.
In the mean time, chop your vegetables.
Add the vegetables and oats. Let it cook for another 10 mins.
Serve hot with crotons, garlic bread and rice. Enjoy!
Ingredients
- 700 g goat neck bones
- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 1 cup baby corn roughly chopped
- 1 cup green beans cut into pieces
- 1 cup onions cubed
- 4 garlic pods
- 1 mutton stock cube
- 1 tsp Salt
- 1 ltr Water
- 2 tbsp oil
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp black pepper powder
Directions
- 1In a pressure cooker, saute the neck bones in oil, ginger and garlic paste for 5 mins on medium heat.
- 2Add about 1 litre of water, black pepper powder, salt and mutton stock cube. Cook for about 20 mins after the first whistle.
- 3Open the pressure cooker, add in all the vegetables including the garlic pods and the oats. Cook for another 10 mins with the lid closed.
- 4Serve hot with crotons, garlic bread and rice. Enjoy!
