My husband isn't so fond of vegetables except for potatoes so I try to include other vegetables that aren't eaten solely. This curry is quick and easy to make when you want to serve your family with something nutritious and healthy.


  • 1 large potato cut into cubes
  • 1/2 cup carrot sliced
  • 1/2 cup capsicum chopped into big pieces
  • 1 large tomato chopped
  • 1 med onion chopped
  • 1 brinjal/ eggplant cut into cubes
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 1/4 tsp salt
  • 1 tsp red chilli powder
  • 1/2 tsp black pepper powder
  • 1 tsp curry powder
  • 1 tsp cumin seeds
  • 1 tsp curry powder
  • 1/2 tsp tamarind sauce/ fresh tamarind
  • 1 tsp garlic paste
  • Water


  • 1In a pot, sauté onion in oil on medium heat till they turn transparent.
  • 2Add all the spices and vegetables and stir. Pour about half cup water and cook on medium heat for 10 mins.
  • 3Add another quarter cup of water and let it cook on low heat for 10 mins. If the curry seems dry, add more water.
  • 4Serve hot with rotis/ bread. Enjoy!
