My husband isn't so fond of vegetables except for potatoes so I try to include other vegetables that aren't eaten solely. This curry is quick and easy to make when you want to serve your family with something nutritious and healthy.
Ingredients
- 1 large potato cut into cubes
- 1/2 cup carrot sliced
- 1/2 cup capsicum chopped into big pieces
- 1 large tomato chopped
- 1 med onion chopped
- 1 brinjal/ eggplant cut into cubes
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 1/4 tsp salt
- 1 tsp red chilli powder
- 1/2 tsp black pepper powder
- 1 tsp curry powder
- 1 tsp cumin seeds
- 1 tsp curry powder
- 1/2 tsp tamarind sauce/ fresh tamarind
- 1 tsp garlic paste
- Water
Directions
- 1In a pot, sauté onion in oil on medium heat till they turn transparent.
- 2Add all the spices and vegetables and stir. Pour about half cup water and cook on medium heat for 10 mins.
- 3Add another quarter cup of water and let it cook on low heat for 10 mins. If the curry seems dry, add more water.
- 4Serve hot with rotis/ bread. Enjoy!
