My mum used to make this salad but she used to get the dressing from the local store. When I got married and moved to another city, I couldn't find that dressing. This made me search for the authentic recipe of vinaigrette. In a classic vinaigrette, ratio of olive oil to vinegar is 3:1 but you can add both according to your taste. With that I also added thyme and garlic, you can add other herbs as well. Honey can be substituted for sugar in this recipe. This dressing can be made and stored in an air tight jar and kept in the fridge for a month. Whenever you want to use it, just shake it and pour on your vegetables.

Ingredients
- 1/2 cup cabbage cubed
- 1/2 cup carrot chopped
- 1/2 cup cucumber chopped
- 1/4 cup sliced olives
- 1/2 cup tin pineapple pieces
- 1/2 cup tin corn
- 1/4 cup spring onions chopped
- 1/2 cup apple chopped
- 2 tbsp tin red beans
- 2 tbsp chickpeas
- 3 tbsp vinegar
- 6 tbsp olive oil
- 1/2 tsp pepper
- 1 thsp thyme
- 1/2 tsp crushed garlic
- 1/4 tsp salt
- 1 tsp sugar
Directions
- 1In a classic vinaigrette, ratio of olive oil to vinegar is 3:1 but you can add both according to your taste.
- 2Take a bowl, add vinegar, olive oil, thyme, garlic, salt, black pepper and sugar. Mix well.
