My mum used to make this salad but she used to get the dressing from the local store. When I got married and moved to another city, I couldn't find that dressing. This made me search for the authentic recipe of vinaigrette. In a classic vinaigrette, ratio of olive oil to vinegar is 3:1 but you can add both according to your taste. With that I also added thyme and garlic, you can add other herbs as well. Honey can be substituted for sugar in this recipe. This dressing can be made and stored in an air tight jar and kept in the fridge for a month. Whenever you want to use it, just shake it and pour on your vegetables.

Its healthy, nutritious and a refreshing salad. A great dish when you are following a diet plan. Living in the middle east, we consume a lot of fast food. This salad makes us balance our good and bad cholesterol. Cabbage, spring onions, red beans and olive oil help reduce your bad cholesterol. Include this salad in your menu occasionally and you will feel energetic all day long.
