Mushrooms are a very good option when you want a break from non vegetarian food. All types of edible mushrooms contain varying degrees of protein and fibre. They also contain B vitamins as well as a powerful antioxidant which helps to support the immune system and prevent damage to cells and tissues.
I used to always buy cream of mushroom ready made soups which are easily available in supermarkets untill i found this lovely recipe which i have been making when i find a good pack of fresh button mushrooms . I really like to enjoy a bowl of soup with some home baked garlic bread and a bowl of fresh salad. Which i usually make when i take a break from the usual chapati and curry. Ingredients
- Mushrooms 200 gms
- Butter-2 tbsp
- Chopped onion 1 small
- Chopped garlic 3 big cloves
- Vegetable stock 1 cup or veg stock cube 1
- Thick cream 1/2cup
- Salt to taste
- Pepper powder 1 tsp
Directions
- 1Heat butter in a pan; add mushroom, onion and garlic.
Saute for three minutes and allow to cool.
Blend it in to a coarse form along with fresh cream and heat again. (keep few mushrooms for garnishing).
Add vegetable stock water (or 1 cube of veg stock dissolved in 1 cup of hot water )and cook for another few minutes until reached a nice soup consistency.
Add salt and pepper powder. Switch off the flame.
Serve hot and enjoy with garlic bread and salad.
