Salads are all time favourites in my house and when we add grilled chicken into an ordinary salad it turns into a complete meal. The chicken tastes too good with garlicky flavour with a dash of herbs . We just relished the tender and juicy chicken with the goodness of veggies which gives us a sense of satisfaction of eating something healthy and yummy at the same time. Do give it a try to enjoy the same feeling.
Ingredients
- For herb chicken marination
- One large Tender Chicken fillet 350 gms
- Vinegar 1 tbs
- Garlic cloves 4 finely chopped
- Salt 1/4 tsp
- Pepper powder 1/4tsp
- Dried oregano 1/2tsp
- Dried thyme 1/2 tsp
- Olive oil 1 tbsp
- For salad:
- 2 cucumbers cubed
- tomatoes cubed 2
- Corn 1 cup
- Lettuce leaves shredded
- For dressing sauce;
- Olive oil 1/4cup or little less
- Mayonnaise 2 and half tbsp
- Yoghurt 2tbs
- Garlic cloves 3 grated
- Mustard paste 1/2tbsp
- Worcestershire sauce 1/2 tsp
- 1 tsp vinegar
- Lemon juice 1 tbsp
- Pepper powder 1/2tsp
- Salt pinch
Directions
- 1Marinate chicken fillet with vinegar, garlic (finely chopped),salt,black pepper powder,dried oregano and dried thyme,mix well. Set aside for couple of hours. Then in a grill pan brush some oil and cook this chicken on both sides till cooked and you get a nice golden colour. Set aside.
- 2Chop all the veggies bite size and start preparing the dressing . For dressing take a small bowl add all the ingredients under dressing and set aside.
- 3Now for the final plating take a wide plate transfer all the veggies first , place the grilled chicken cut them into slices and drizzle the prepared dressing over it enjoy the refreshing salad with a bowl of hot soup
