The liver is considered to be the most nutritious part of the lamb. It is very rich in proteins, iron and Vitamin. Iron helps oxygen transportation in the body and keeps the hemoglobin at a healthy level.

After my earlier posted recipe of mutton liver fry which was my moms recipe and was a great hit among my viewers here I am sharing another recipe of mutton liver. This is also very delicious do try it and leave a feed back

Ingredients

  • Mutton liver 400 gms
  • Oil 5 tbsp
  • Cumin seeds 1/2tsp
  • Peppercorns 1 tbsp
  • 5 cloves
  • 1 black Cardamom
  • Onion sliced 1 medium
  • Tomatoes sliced 2
  • Ginger garlic paste 1 tbsp
  • Turmeric 1/2 tsp
  • Red chili powder 1 tsp or more
  • Coriander powder 1 tbsp
  • Yoghurt 3 tbsp
  • Garam masala 1 tsp
  • Salt to taste
  • Green chillies chopped 2
  • Dry fenugreek leaves ( kasuri methi) 1 and half tbsp
  • Coriander leaves chopped

Directions

  • 1Liver has a thin white transparent shiny membrane on it. Always remove that membrane and then cut into small cubes. Sprinkle a little salt and turmeric powder on raw liver and leave it for 15 minutes. Then wash it thoroughly removing all blood veins. Put the washed liver in a strainer to drain off all the excess water.
    Heat oil in a pan and add cumin seeds, black pepper, cloves and black cardamom and fry for 1 minute.
  • 2Add sliced onions and fry until golden brown then add tomato and cook until they are soft then add liver cubes and fry until it changes color.Add ginger garlic paste and mix.Add turmeric, red chili, coriander powders and chopped green chillies fry till 5 mts . Add yogurt and mix let it cook for 10 minutes on low flame. Add garam masala powder,If required add some water finally add kasuri meethi by crushing it with the help of your palms. Switch off the flame. Now before serving add chopped onion and coriander leaves.
